Roasted Pecan, Maple, Basil Cheese Log

Celebrating a wonderful Fathers Day at Hope Haven with a cheese creation inspired by my sweet husband. Originally from Canada, and his favorite flavors are nutty, honey and salty. He also loves pesto. So this was posing quite the challenge.

​First I made a lovely batch of plain chèvre to use as my canvas.

Then I slow roasted chopped pecans, with our goat milk butter, and added a bit of brown sugar, maple syrup and Himalayan salt for balance.

I blended the plain chèvre with a bit of honey and more Himalayan fine cheese salt.

Finally rolled it together with freshly harvested basil washed with lemon juice.

The resulting cheese is fantastic!!!!!

Eggs - and Egg Shells

How do you use or recycle your egg shells?

if you have chickens, it’s great to feed them to hens. It aids in calcium development of future eggs.

Just collect then dry them in a oven at 200 degrees for 10 minutes then crush. After they cool; place in a jar. Their purpose is to sprinkle at the base of plants like peppers and tomatoes to prevent blossom rot and it’s great for pests as well.

start seeds in them; right in the carton. If carton is cardboard, just cut apart and plant directly. Easy peesey.

How to Cook Chestnuts - Roasting Chestnuts in an Oven
  • Preheat your oven to 400ºF (205ºC).
  • Cut an "X" shape into the flat side of each chestnut.
  • Place the chestnuts on a baking sheet.
  • Roast the chestnuts for 15-20 minutes.
  • Crush their skins.

Our Cheese
Any cheese made from cow milk can be made with Goats Milk. The production of goat cheese follows many of the same basic cheesemaking steps as other types of cheese:
  • Gathering the Milk as a Grade A Goat Dairy: We own our goats and do the milking ourselves. This ensures top quality product from breeding, to feeding to milking to cheesing.
  • Pasteurized or Unpasteurized: Our aged cheese are made with unpasteurized milk and aged for at least 60 days before it is sold.  Soft Cheeses (not aged) is always made from pasteurized milk. 
  • Acidification: Starter culture is added to the milk to change lactose (milk sugar) into lactic acid and alter the acidity level of the milk. This kick-starts the thickening of the milk into curds. Rennet is then added to further encourage curds to form. If you're making goat cheese at home, you can use a short-cut method without rennet and starter, instead use lemon juice or vinegar.  Vegetarian cheese is available, using vegetable rennet.  
  • Separating Curds and Whey: For very soft cheeses,  the curds might just be wrapped in cheesecloth and hung so moisture drips out of the curds. For most other cheeses, the curds are cut using a knife or a tool that resembles a rake. Cutting and pressing the curds further encourages them to expel liquid or whey. Soft cheeses are cut into large curds;harder cheeses are cut into tiny curds so that as much moisture drains out as possible.
  • Salting: This adds flavor and acts as a preservative.
  • Shaping: The curds are put into some sort of form (basket, mold, ring, etc) to form a shape. Cheese comes in many different shapes such as logs, pucks, crottins, or pyramids.  We sell our soft cheese unformed in a container. Semi-hard or hard  cheese is sold in wheels.
  • Ripening: Fresh goat cheese ripens (ages) for only a few days or weeks. Other types of goat cheese age for many months.

Dressage Schooling Show Series to begin Feb 14 with Judge Susan Selvey

We will kick off our dressage schooling show series on Feb 14 at 9 am.  We will schedule subsequent shows based on demand and other shows occurring in the area.  

Our Judge is Susan Selvey.  

Pre-registration is $25 and the day of the show is $30.  Ribbons to 6th place and Trophies for 1st and 2nd in Class of 5 or more.  Must send or bring negative coggins and sign

Due to a scheduling conflict between the Colleton County Schooling Show and our own, we will be changing the type of schooling show we are putting on. October 25th is HHEC's first Jumper Schooling Show date. This show offers classes from 12" to 3'3", and cash prizes! The dates of the series will remain the same.
Class entries are now open. Don't forget to enter early to receive the premium price. Entry fees will increase the day of the show.

Hi, our October show is coming up fast.  We have great show planned with new classes.  We are adding a costume contest, we are adding regular english pleasure and a lead line pole class - showing off young ones half seat ability.  We also have some donated prizes to offer and beautiful division champion trophies.
