Celebrating a wonderful Fathers Day at Hope Haven with a cheese creation inspired by my sweet husband. Originally from Canada, and his favorite flavors are nutty, honey and salty. He also loves pesto. So this was posing quite the challenge. First I made a lovely batch of plain chèvre to use as my canvas. Then I slow roasted chopped pecans, with our goat milk butter, and added a bit of brown sugar, maple syrup and Himalayan salt for balance. I blended the plain chèvre with a bit of honey and more Himalayan fine cheese salt. Finally rolled it together with freshly harvested basil washed with lemon juice. The resulting cheese is fantastic!!!!!
